Better tomorrow.

Crispy Spaghetti was born in Brooklyn somewhere between an Italian kitchen and a Jewish one.

The story in my family goes that an Italian neighbor brought a pot of spaghetti across the street to my family. It was saucy, slurpy, and delicious. But the next day, faced with the leftovers, my family did what they did best: made it their own.

They threw the spaghetti into a ripping-hot pan with a little oil and left it there until the bottom turned golden and crispy. Then they flipped it, crisped it some more, and somewhere along the way, the leftover became better than the original.

And that became the ritual.

To this day, whenever my family eats pasta, no matter how good it is, someone inevitably says: “It’ll be better tomorrow.”

That’s the idea behind Crispy Spaghetti. We take the part of the meal you’re supposed to be least excited about — the leftovers — and make it the part you look forward to most.

Because in my family, we always make extra pasta. Not because we want more spaghetti tonight. Because we want crispy spaghetti tomorrow.
